On Fridays I have Latin Cuisine! I was looking forward to this class...to learn more about another cuisine, I couldn't wait. We have another new chef, Chef Frank Cervantes. He once worked at the famous (or infamous) Greenbrier Hotel in West Virginia (it was built in 1778 and this was the place where an underground safe house was built for each politician and his/her family...but not the President, he had his own place that was a hole in the ground! I saw a documentary on it over Christmas and they were giving a tour of the facility...it was pretty amazing! They showed the bunk beds and the mattresses still had the plastic wrapped around them! But just the look of this hotel is intimidating! Here is a link if you want to see it!

Now, this is not a typical plating that we do, but Chef said he only wanted a little of each thing, so we only gave him a little! And we put the soup in a cup on the side of the plate...again, not typical, but its what he asked for.
The menu for today was pretty relaxed, meaning we only had 5 recipes to make. This week the menu is from Mexico. We made fresh corn tortillas! That was really cool to try! We also made Sopa de Pollo, de Maize y de la Cal (Chicken, Corn and Lime Soup), Arrow Blanco con Verdures (White Rice with Vegetables), Mole Verde con Hierba (Pork Herbed Green Mole) and Flan de Naranja (Orange Flan)
