Back to School

Well...its back to the books! We had a 5 week break between Spring and Summer quarter and it has made it really hard to want to go back! I am taking a little more than a full load this quarter and I like my schedule for the most part...
Classical European and World Cuisine on Tuesdays from 12:30pm to 4:50pm; Asian Cuisine on Tuesdays from 5:50pm to 10:10pm; Cost Control on Thursday from 12:30pm to 4:20pm; Intro to Pastry on Sundays from 7:30am to 2:00pm (OUCH) and here is the kicker...now I have to go to the school on Saturdays from 12:00pm to 2:00pm for the lecture portion of my Sunday class!
But, I love my classes so far! We are making so many good things and I am enjoying the tasting portion of it too :) Here is what we did in Asian cuisine this week:
Pungent and Hot Soup (Hot and Sour Soup)
Mu Shu Pork (or Mo Shu, Moshu, Moo Shu - means 'Wood Shavings Pork') with Mandarin Pancakes
Wooly Lamb (Lamb on Rice Sticks)
Vinegar-Slipped Fish Chunks
Stir-Fried Bok Choy
Jiao Zi or Guo-tieh (Pot-Stickers)
In World Cuisine, this week we did Scandanavia/Russia!
Frikadellen (Danish Meat Patties), Loby (String Beans in Sour Cream Sauce), Lefse (Potato Flatbreads)
Borsch Moskovsky (Moscow-style Beet Soup)
Syrniki (Sweet Cheese Fritters) with Berry Kissel
Lefse (Potato Flatbreads)
Pierogis (Dumplings with Potato and Cheddar filling)
Salmon Kulebiaka (Salmon with Rice Stuffing in Brioche or Puff Pastry Dough)
