Week 2 at School

This week was fun at school! In my European class we were "in" Spain and Portugal. On the first day we did a Tapas menu, one of the recipes called for calamari (squid)! I got a picture of the legs of one cause he had the 2 long legs, which are the ones that are used to reach out and grab things with! I had watched a thing on the Discovery channel about them and it was cool to see them in a whole state and take them apart.
We were using the legs and the tubes for a recipe.
Calamares Encebollados (Squid with Caramelized Onions)
Bacalad Al Ajo Arriero (Bacalao Hash - I love Bacalao and have been dying to work with it! It is salted cod...it is salted to perserve it and you just have to soak it in water to rehydrate it and pull out the salt...I was so excited to have the real thing!)
Gambas Al Ajillo (Sizzling Garlic Shrimp)
Croquetas de Jamon (Serrano Ham Fitters)
Tortilla de Patatas (Potato Omelet)
Pan Con Tomate y Garum (Tomato Toast and Black Olive, Anchovy and Caper Spread)
Aceitunas Verdes Rellenas de Pimiento y Anchoa (Green Olives Filled with Piquillo Peppers and Anchovy)
Then on day 2 we made:
Pera Salsa de Caramelo al Cafe (Pears with Caramel-Coffee Sauce...I showed the dessert first because this was amazing!!!!)
Gazpacho Sevillano (Classic Gazpacho)
Paella Valenciana
Rape con Romesco (Monkfish with Romesco Sauce...it was my first time working with Monkfish and it was interesting!)
Espinacas a la Catalana (Spinach, Catalan-Style)

Then in my Asian class we made:
Yangchow (Yangzhou) (Fried Rice)
Emerald Shrimp
Wonton Soup
Bean Curd in Oyster Sauce
Red-Cooked Duck
Shanghai Sweet-and-Sour Spareribs
