I can't believe we are already half way done with this quarter! I know I say this every time, but it really has flown by! I am pretty sure I bombed my Career Development mid-term but aced my Garde Manger mid-term!
On Thursday part of our practical was to make a salad with a vinaigrette...I have to say my dressing was pretty darn good!!!

On Friday we had to create a dozen each of 3 canapes. For my first one, I made a honey butter that I spread on a cracker, then a slice of apple that had been soaked in some lemon water, topped with brie cheese and some lemon zest. The next one I did the same honey butter on a cracker, layered strawberry and kiwi on top, drizzled with a passion fruit puree, lime zest and a little sugar. Then the last was a typical classic egg salad on top of toasted white bread and garnished with chopped parsley.
