I haven't posted anything from school lately because we really haven't been doing much for me to put up here. Most of what we have been doing was all prep work for tonight's class. We have been working on pate, terrine, gallatine and mouse. Tonight was a practical we had to do in order to show we understand what we are doing! Once we cooked the gallatine, we had to coat them and the vegetables in aspic. Aspic is essentially a chicken consomme (broth that has been clarified) that is mixed with gelatin to use as a coating. So when you look at the picture, you'll notice the food looks like it has a glossy look to it, that is because of the jello like chicken broth coating the pieces.
