Next time you make a Lemon Meringue Pie, try making individual "pies" with a muffin tin! THis is perfect for the holidays, so there is no mess with having to slice a pie! You can either press your graham cracker mix into a muffin tin or press pie dough into a muffin tin with your fingers or a shot glass! If using graham crackers, bake crusts for 5-8 minutes and if using pie dough, bake 10-15 minutes...just until lightly browned. Fill with your lemon filling and top with the meringue. Brown meringue lightly with a torch or under a broiler!
