Pumpkin Mousse

I came across a pretty cool recipe in time for the holidays! Try something new, instead of doing another Pumpkin Pie...how about a Pumpkin Mousse? It is a simple and easy recipe to put together!
Pumpkin Mousse
1 c whipping cream
15 oz can pumpkin puree
1/3 c milk
3.4 oz pkg of pumpkin spice pudding mix
(if you can't find pumpkin spice pudding, use vanilla and add 1/4 tsp of pumpkin pie spice)
1 tsp vanilla
Whip the cream to medium peaks, just before it is fully whipped cream. In a separate bowl, combine pumpkin puree and milk until smooth. Add pudding mix and vanilla, combine until smooth. Then fold in the whipped cream. Place in individual serving dishes or into a larger one, chill and serve with whipped cream, candied pecans or chocolate shavings on top!
